Recipes : Ratatouille Pasta
One of my favorite pasta dishes is Ratatouille Pasta. It’s full of a wide variety of vegetables and is incredibly tasty. I’m totally craving this stuff right now, but lack all of the ingredients! Hopefully one of you readers can make and enjoy it for me.
Ingredients :
+ 4 cloves garlic, minced
+ 1/2 teaspoon crushed red pepper
+ 3 tablespoons Extra Virgin Olive Oil
+ 1 small red bell pepper, seeded and chopped
+ 1 green bell pepper or 1 cubanelle pepper, seeded and chopped
+ 1 medium sized yellow onion, chopped
+ 1 small eggplant, diced
+ 1 medium sized zucchini, diced
+ 20 Kalamata olives, pitted and chopped
+ 2 tablespoons capers, drained
+ salt and pepper to taste
+ 1 28 ounce can crushed tomatoes
+ handful chopped fresh parsley
+ 1/2 pound pasta
+ 3 ounces pine nuts, toasted until golden
Directions :
1. Heat the garlic and crushed red pepper in olive oil in a deep skillet or pot over medium heat until garlic is lightly browned.
2. Add the peppers, onion, eggplant, zucchini, kalamata olives, capers, salt and pepper. Cover and reduce heat the medium low.
3. Cook, stirring occasionally, until the eggplant begins to breakdown. About 10 to 15 minutes.
4. Add the tomatoes and parsley. Heat through. Toss with pasta and top with toasted pine nuts.
Accompany this dish with a side salad and some red wine for a fabulous dinner. Also enjoy the leftovers after the pasta has absorbed all the flavors.

You can also find a lot of information about how to increase your chances of getting scholarships, such as ACT, GRE, and LSAT practice tests. Scholarships.com offers a lot of great information for current and future college students. It’s definitely one of the best resources out there for those in college.
