While traditional French Toast is incredibly tasty, especially for a breakfast food addict like myself, it should be reserved for special occasions. However, this vegan Fruit French Toast is great to enjoy anytime. :) This is an easy spin on regular French Toast. Since it’s made with fruit it’s much lower in calories, fat, and cholesterol than traditional French Toast. It’s also a great way to get in some of your daily allowance of fruit. :)

Ingredients :
+ 1 banana, peeled
+ 4 large strawberries, fresh or frozen
+ 1/3 cup apple juice
+ 1/2 teaspoon ground cinnamon
+ 4 slices whole wheat bread

Directions :
Blend the banana, strawberries, apple juice, and cinnamon in a blender. Heat a pan and, if desired, add a bit of butter or soy margarine to prevent sticking. When the pan is hot, soak the bread in the fruit mixture until it is covered but not saturated. Cook on both sides until lightly browned.
