Recipes : Baked Pears in Blankets

This sweet and simple desert is great for those days when you don’t have much left in your cupboards. You can substitute canned pears for regular if desired, but it is not recommended and the baking time would need to be increased.

Ingredients :
+ 2 ripe pears
+ 1/2 teaspoon ground cinnamon
+ 1/4 teaspoon nutmeg
+ 3 tablespoons soy margarine
+ 1 1/2 cups flour
+ 1/2 cup cold water
+ 3 tablespoons molasses
+ 1 tablespoon soy margarine, melted

Directions :
Preheat the oven to 425 degrees F. Slice each pear into 8 slices, place in a bowl, and coat with cinnamon and nutmeg.
In a separate bowl, mash 3 tablespoons of soy margarine with a fork. Add the flour, cold water, and the molasses. Mix to form a soft dough. Roll the dough out on a floured surface and slice into 16 long strips. Wrap each pear wedge in a dough slice and place on a lightly oiled cookie sheet. Brush each wedge with melted margarine.
Bake for 20 to 25 minutes. Serve warm.
