After my post that highlighted the healthiest foods for you that also happen to be green, Go Green On Your Plate, I decided that it would be a good idea to start featuring recipes that include those foods as a main ingredient. For this post, I decided to feature an avocado recipe. This recipe for Avocado & Mango Salsa is as fresh and delicious as it sounds.

Ingredients :
+ 1 mango – peeled, seeded and diced
+ 1 red bell pepper, seeded and diced
+ 3/4 cup chopped red onion
+ 1 tablespoon white sugar
+ 1 tablespoon olive oil
+ 2 tablespoons white wine vinegar
+ 1 avocado – peeled, pitted, and diced
+ 1 teaspoon salt

Directions
1. Combine mango, bell pepper, onion, sugar, olive oil, and vinegar in a bowl. Gently fold in diced avocado, and season.

By the way, right now is a great time to check out camping gear to get the best variety. Hit up the stores before the season is in full swing.

  1. This sounds so yummy! I have everything except for the bell pepper and mango though. I do have cucumber – maybe I can use that somehow. Next time Tom & I hit up the grocery store we’ll get the ingredients for this recipe and try it out with some chips or something. It’s a great alternative to eating other snacks! :)

  2. I’m trying so hard to eat a bit more healthy. Thanks for the recipe. I think I’m going to attempt it this weekend. Know of any chips that are more healthy than the average chips?
